Chef Pasi Petanen is rewriting the rules for pop-up restaurants. What was supposed to be a quick food fling at Riley Street, East Sydney, has developed into long-term commitment. The former head chef at Marque restaurant has already operated Cafe Paci for 18 months, picking up a chef's hat in the process.
