"I've just signed an extension for another 12 months," the talented chef tells Good Food. Pop-ups are supposed to be temporary, and Petanen says next year he will probably move the restaurant to a new venue or tackle a different project. "I wouldn't mind opening a Scandinavian bakery one day," he says.
